Meal MAYhem 1st

So, tonight we're having Macaroni With Beef (that takes you directly to the recipe)


Ingredients

Serves 6
  • 8 ounces elbow macaroni
  • 1 pound ground beef
  • 1 cup finely chopped onion
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cans (each 8 ounces) tomato sauce
  • 1 1/2 cups cooked frozen or fresh corn (2 to 3 ears)

I cheat a little bit here and there. It's a Martha Stewart recipe and she assumes that everyone can afford fresh and expensive ingredients. I cannot.


Step One: Get that macaroni going. It takes a few mins to get the water to boil and then more time to cook the macaroni. If you start the water at the same time as the beef it all gets done together.

Step Two: Cook the ground beef and onion until both are done. (Ground beef browned and onion translucent) Season with seasonings

Step Three: Add tomato sauce and corn (drain if using canned) I went ahead and just used a 15oz can of each. Yes, it's more than the recipe calls but it worked out fine. Heat until bubbly.

Step Four: Combine everything together and serve!

  2. It will probably keep a few days if you don't mind leftovers! That way your lunches are pretty much covered.

  3. yeah i dont mind leftovers at all. Just a little boring to have the same thing every day you know? one other idea though is to make less pasta and freeze individual portions of the meat so i could have it one or two days/nights and then later on?

  4. That is an excellent idea. I'm sure it would freeze just fine and then you would have measured portions.

  5. yay :) im excited to try it this week. i really feel like baby steps in cooking will help build my confidence that i can do it. Ordering the ingredients for delivery was more expensive, but im trying to get around my reluctance to actually go shopping (or laziness) Its also hard bec I dont have a car for transport in the city.

  6. so my variation on this was i used rotini, and instead of tomato sauce i used manwich sloppy joe sauce, which took away the need for any seasoning whatsoever. I used it bec I had it and it came out really good.
